The emphasis on this course is PRACTICAL with :

  • 560 hours in the fully renovated pastry laboratories.
  • 40 hours of applied technology



With some of France's best chefs you will learn :

  • • Doughs and batters

But being a professional is not just about knowing the techniques. The ENSP also provides courses in :

  • • Hygiene and Security - 25 hours
  • • Drawing (to stimulate your sense of aesthetics and learn about form and color) - 10 hours
  • • First-aid ( because the risk of accidents in a pastry laboratory can be high) - 10 hours


At the end of the 5 months, you will be ready to put the knowledge and techniques that you have learned into professional use and perform an internship in a restaurant or pastry boutique. The length of this internship is variable depending on your needs and the time you have available. An internship lasting 1 month is a minimum, but the duration can be be extended to 3 months or even longer.

We know how stressful the beginning of an internship can be especially if you are not confident of your language skills. This is why, during your five month stay at the school, we will also provide you with 80 hours of French classes (4 hours per week).Regardless of your language skills when you arrive, these classes will help you get to a functional level.
